Pizookie
Ingredients
- 1/2 cup butter, melted
- 1 cup dark brown sugar
- 2 tsp vanilla
- 1 egg
- 1 cup all purpose flour
- 1/2 tsp baking powder
- 1/4 tsp kosher salt
- 1/8 tsp baking soda
- 1/2 cup semi-sweet chocolate chips
- 2/3 cup rolled oats (optional)
- Vanilla ice cream
Directions
- Preheat oven to 350 degrees
- Melt butter in a microwave-safe bowl, then transfer to mixing bowl
- Add brown sugar and whisk until combined. Add vanilla and egg and continue to whisk until fully incorporated
- Add baking powder, salt, and baking soda to the wet ingredients and mix until fully combined. Add flour and oats (if using) and mix to combine. Add chocolate chips and mix to combine
- Spray a small cast-iron skillet with baking spray. Transfer the dough into the skillet and spread it evenly. Bake until just slightly gooey in the middle and golden around the edges, about 12-15 minutes. Remove from the oven and let rest for a few minutes before topping with ice cream
Notes
- We made two of them using a 6-inch cast iron pan
- Do not use a nonstick pan for this recipe, since it is meant to be eaten out of the pan (you don't want to scratch your pan!)
